Seroendeng, my Surinam Recipe

Hi My name is Moony and on my food blog, Moony4ever.blog I write about my favorite Surinam dishes. I have been looking forward to this for a long time: making seroendeng myself. Seroendeng is a roasted coconut shavings with 8 different herbs and is eaten as a side dish. Like fried onions, seroendeng is served as an extra seasoning when eating. 

I am amazed by the many spices, but the making itself is ultimately not too bad. Take the time to rub the herbs well with the onions.

What is Seroendeng?

Seroendeng is a typical dry side dish from Indonesian – Javanese cuisine. Grated coconut (topper) is the essential part of Seroendeng. Freshly grated coconut, instead of grated coconut left over from making coconut milk, gives a richer flavor. The coconut meat should be a young coconut but has a firm texture and grated to make long pieces.

To make Seroendeng, spices and herbs such as onions, garlic, coriander powder, brown sugar or gula djawa, tamarind, bay leaves (daun salam), lemon leaf (salam leaf) and galangal (galangal) are ground into a paste and fried. Then grated coconut is baked (baked with minimal or no oil) until golden brown and mixed with the spice paste. Roasted peanuts can be added for extra crispy texture and flavor.

You Can Keep It In Pots For Several Months After Preparation.

Seroendeng can be mixed with meat in dishes, well-known rice table dishes such as Rendang (beef dish). Delicious on top of dishes such as chicken skewers, nasi, ajam smoor, green beans or sprinkle over Ketan (sticky rice).

To make Seroendeng, spices and herbs such as onions, garlic, coriander powder, brown sugar, tamarind, bay leaves (daun salam), lime leaves (salam leaf) and galangal (galangal) are ground into a paste (bumbu) and fried. Then grated coconut is baked dry until golden brown and mixed with the spice paste. The golden brown roasted & fried peanuts can be added for extra crispy texture and flavor.
